Cooking With Your Kids
Are you looking for something to do as a family? We’re here to help. This month’s family activity is a vegetarian variation of last month’s recipe for thlacos with ahuaca mulli from History Unboxed. If you’re looking for a new recipe and you want to learn about history and culture, this is for you. If you enjoy this activity, be sure to check out their website for more.
Black Bean Filling
Ingredients:
- 2 cans black beans, drained and rinsed
- 1/2 cup vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon allspice
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1/2 teaspoon salt
Directions:
- Combine everything in a medium saucepan and bring to a boil.
- Reduce to a simmer and cook, uncovered, for about 20 minutes.
- Stir frequently until the liquid is almost completely gone.
- Serve warm on corn tortillas and top with ahuaca-mulli.
Directions:
- Combine the meat and seasonings in a bowl, making sure they are completely mixed.
- Heat about a tablespoon of vegetable oil in a skillet on medium heat.
- When the oil is shimmering, add the meat. Cook until brown, stirring frequently.
- Serve warm on corn tortillas and top with ahuaca-mulli.
Ahuaca Mulli Guacamole
Ingredients:
- 3 large or 4 small avocados
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1 teaspoon onion powder
- 12 cherry tomatoes, cut into quarters
Directions
- 1. Carefully cut the avocados in half and remove the pit. To remove the pit, dig the edge of the blade of the knife into the pit and twist until it comes free. You can also push the pit from the outside with your thumbs.
- Use a spoon to scoop the avocado out of the peel and into a bowl.
- Mash the avocados with a potato masher or large spoon.
- Stir in the salt, lime juice, and onion powder. Taste and adjust seasonings if desired.
- Stir in the cherry tomatoes.
